WINNING LAMB POTJIE RECIPE

THIS IS A SUPERB DISH AND NEEDS VERY LITTLE WATCHING, JUST FOLLOW THE DIRECTIONS AND LEAVE IT ALONE, THE CARROTS AND SWEET POTATO THICKEN THE SAUCE , SERVE OVER COUSCOUS OR RICE

Directions

BROWN LAMB IN OIL
ADD HERBS
THEN ADD ALL OTHER INGREDIENTS
gently simmer until done
+/- 3 hours depending on lamb shank size

Ingredients

Lamb for potjie

3 tablespoons olive oil
6 12- to 14-ounce lamb shanks
2 celery stalks, chopped
1 large onion, chopped
1 large carrot, chopped
6 large garlic cloves, chopped
3 anchovies, just 3 x small fillets, use the rest of the tin mixed with 1T butter on toast
(Yes anchovies)
2 cinnamon sticks
2 small bay leaves
2 fresh thyme sprigs
2 tablespoons gin
1/4 teaspoon ground nutmeg
4 tablespoon tomato paste
1 x 750-ml bottle Merlot
3 peppers (red and yellow)
1 tablespoon honey
1 peeled and chopped sweet potato

Serves 6
3 HOURS

Question.

3 drained canned anchovies - does this mean 3 anchovies , or 3 cans of anchovies ? and what size of anchovies / tins etc ?

This is just the most amazing potjie recipe. Tried it on National Braai day 2013 and I definitely stole the lime light with this one. And it is so easy.
